Inlike industrial pastas, many of Marella's cuts are handcrafted using traditional methods. The dough is extruded through bronze dies and then air dried at 37*C for 2-3 days. The result is a fragrant, flavourful pasta which expands when cooked, maintains its beautiful shape, and is ideal for holding sauce.
