  • 1.5 tsp black pepper, coarsely ground
  • 1 tsp salt
  • 1 tbsp olive oil (optional)
Directions
  1. Render the guanciale
    Place the diced guanciale in a cold pan and cook over medium-low heat until crispy and golden brown. Remove from heat. (Optional: add olive oil.)
  2. Prepare the sauce
    In a bowl, whisk the egg and egg yolks. Mix in the grated Pecorino Romano and black pepper until a thick paste forms.
  3. Cook the pasta
    Boil pasta in lightly salted water until al dente. Reserve about 1 cup of pasta water before draining.
  4. Combine
    Transfer the cooked pasta to the pan with the guanciale and rendered fat, tossing to coat.
